Another lesser known rumour
is that stuffed Fiddleheads á la Napolonaise
are the finest thing to be had ever.

Therefore, it is not unknown
for individual fiddleheads
or entire towns to be harvested
in one fell swoop by unscrupulous gourmands.
There are laws against this sort of thing but
many cooks insist that
the poaching will continue
as long as these creatures can be found.

The fact is, fiddleheads taste mostly bitter.
It is only their heads which are tasty,
a rich fatty flesh reminiscent
of "both pigeon and truffles."
and, according to M,
"the sweetest, softest abalone,
tenderized with a bat,
doused in butter and rolled in crumbs."
